This coffee is made using the Mountain Water Process, so named because the water comes from Pica de Orizaba, Mexico’s highest mountain. The green (unroasted) coffee beans are steamed and then placed in a water-based solution in an environment precisely controlled for temperature, pressure and vacuum. This extracts nearly all the caffeine, but leaves the flavor compounds intact.
